Juice of 1 lemon

Half a lime juice

250 g of rucola

1 clove of garlic

100 grams of parmesan or grana padano

Extra virgin olive oil

Salt, pepper

Method:

  • Put the slices of salmon on 4 plates, sprinkle with mixed citrus juice, season with salt and pepper.
  • Sprinkle with oil, season with salt and pepper.
  • On each plate, put out a pile of rucola and sprinkle it with parmesan cheese.
