
Salmon tartare with fresh cucumber and black caviar

- Serves: 4 servings
Ingredients:
300 g of raw salmon fillet
2 egg yolks
1 fresh cucumber
A bunch of dill
1 small black caviar jar
Olive oil spoon
Salt, pepper
Pesto:
100 g of fresh basil
10 g of pine nuts (or almonds)
15 g of parmesan cheese
5 g of multiflorous honey
5 ml of lemon juice
1 clove of garlic
1 spoon of Greek yoghurt
Oil
Salt, pepper
Method:
- Slice salmon into small cubes, mix with yolks, chopped dill and a tablespoon of oil, season with salt and pepper.
- Peel the cucumber, remove the seeds with a spoon, cut into small cubes.
- Mix pesto ingredients together using a blender.
- Put a circular cookie cutter on a plate, place the cucumber on the bottom half of the height and press it with a spoon. Fill up the second half of the cutter with salmon. Decorate with a basil leaf.
- Sprinkle around the basil pesto and decorate with thick yoghurt with a spoonful of caviar.
