Smoked salmon smoked served on avocado wedges

Ingredients:

200 g of smoked salmon

2 ripe avocados

200 g of ricotta cheese

1 bunch of chives

50 g of stoned green olives

30 g of capers

1 tablespoon of oil

Salt, black pepper

100 g of cherry tomatoes

50 g of rucola

Method:

  • Cut avocado in half with a knife placed on the stone (turn it around), turn the avocado halves in opposite directions, separate the two halves from each other (after the turn they should go apart easily), remove the stone.
  • Chop the olives and capers into small cubes, add the ricotta, oil and mix thoroughly.
  • Fill avocado halves evenly with the paste. Sprinkle the whole with chopped chives.
  • Roll the salmon into florets and place in the middle.
  • Use quarters of tomatoes and rucola to decorate.
